Eating Healthy – Okra Stew & Yam Flour

So without wasting your time with long notes today, we are walking with you through the process of cooking okra stew and to go along with it, we are going to make yam flour balls as well.

Now let’s go to your kitchen and get started!

INGREDIENTS

Okra Stew ingredients

2 pounds of okra

1 pound of Cod fish (stock fish)

2 tablespoons of crushed pepper (At your discretion, use quantity you can tolerate)

16 ounces tomato paste

1 cup of palm oil

2 tablespoons of chicken flavor

2 cloves of garlic

2 tablespoons of crush pepper

Medium sized onion

1 large sized mackerel fish (titus)

1 pound of chopped spinach

1 ½ pounds of chicken thigh

1 medium sized bunch of spring onion leave

For the yam flour balls, ingredients are:

1 lbs of yam flour

Plastic wraps for wrapping the yam flour after moulding dough.

Spatula for turning the dough

10 cups of water

 

 

PROCEDURE

Okra Stew Procedure

Step 1

Wash the meat and cod fish, then transfer to the pot.

Add, some sliced onion,  ¼ teaspoon of salt and 1 tablespoon of chicken flavor to it.

Set onto the stove and let cook for about 18 minutes on medium heat,

After 18 minutes add the mackerel (titus) fish allow it to cook for another 5 minutes.

 

Step 2

In another pot, which we would be using for cooking the okra stew,

Set the pot on the stove and add 1 cup of oil to heat a little bit.

Add sliced onion and stir for about 1 minutes.

Add your tomato paste and pepper, then stir.

Add 2 pinches of salt, 1 tablespoon of chicken flavor.

Cover and let it cook or fry for about 5 to 10 minutes.

Now add your already cooked combination of mackerel fish, cod fish and chicken meat including the stock from the combination.

Allow to cook for about 3 to 5 minutes.

Now we are almost done, and the next thing is to add the okra and the vegetable, then mix.

Allow to simmer for about 2 to 5 minutes.

 

Next is the yam flour procedure, it tastes just like mashed potato, I encourage you to try it, trust me, you will like it and if you’re interested, the recipe is what I described below;

 

 

Poundo Yam Procedure

For the yam yam (1lbs), fetch into your pot, 10 cups of water and set on the stove to boil.

Once boiled, reduce the power of the stove to the barest minimum.

Now it’s time to start adding your yam flour and turn using your spatula at the same time, add the flour sparingly and bit-by-bit so yam or dough doesn’t get too thick.

Once thick enough, (you can sprinkle little bit of water on it) cover and let it steam for about 2 minutes on the very low heat still.

After two minutes, turn the dough again and start serving, the best bet is to wrap a quantity each individual participating in the eating can finish in one sitting using a plastic wrap and that’s it.

Now ready to be served with your soup or stew but what we are using here is our okra stew above.

  2. I used to eat okra when I was younger. It’s hard to find it nowadays. Or it was maybe because my grandma loves okra and used to cook it a lot. She would have loved this recipe.
