TOMATO STEW AND WHITE RICE

 

TOMATO BRIEF

Tomato is an edible crop that falls under true fruits and therefore obtained its name as an edible fruit which is usually green when unripe and bright red when ripe, also known as a berry, and possessed its scientific name is Solanum lycopersicum. This annual plant is a generally known and appreciated plant in the world as it can be consumed as juice, sliced and combined with vegetable salad, and the most common of all, used for making sauce and stew. Most of this fruit is 95% water, also contains 4% carbohydrates though low in fat and protein which account for 1%, 100 grams of tomato fruits is known to account for 17% of our daily consumption of vitamin C.

 

RICE BRIEF

Rice belongs to the grass family and known as Oryza glaberrima or Oryza sativa- the former, being African rice and the latter Asian rice, are both classified as cereal plants, also generally known as one of the most staple food all over the world, rice happens to be the most commonly consumed food in both Africa and Asia. This crop is an annual plant but can thrive as a perennial crop in tropical zones. Rice can be used for lots of recipes such as cake, soup, pap, cooked as it is, and combined with other forms of foods such as vegetables and fruits. And so there are quite a several rice varieties with the most popular being white rice broken further into long-grained, short-grained, enriched, polished and others. We have brown, red and black rice as well. Nutritional values of these varieties of rice differ, but generally, rice being a high energy-producing food, 100 grams account for 130 calories, with 28.7 grams being carbohydrate (10%) daily value, 2.36 grams of protein (5% daily value) and accounting for a very low-fat content of 0.19g (0% daily value).

 

Now let’s get started with our rice and stew recipe

INGREDIENT FOR THE STEW

1 pound diced tomato

1 pound of crushed tomato

½ pound of tomato paste

1 large onion

2 cloves of garlic

Salt to taste.

Chicken season flavor – 3 tablespoons need for the whole cooking

2 cups of vegetable oil

½ teaspoon of curry

2 pounds of chicken (optional)

1 pound beef honeycomb (optional)

2 pounds of Mackerel (optional)

½ cup of crushed pepper

 

FOR THE WHITE RICE

Four cups of rice (for 7 servings)

 

PROCEDURE

Wash the chicken and beef into a pot

Add the 2 cloves chopped garlic, ½ teaspoon of curry, 2 tablespoons of chicken season flavor and salt to taste, now add just one cup of water, boiling meat does not require a lot of water if you want the ingredients to penetrate the meat and give it a nice and satisfying taste; then set on the stove to cook and let it cook for about 15 to 25 minutes.

While the meat is cooking, to another pot, add your 2 cups of oil and some cuts onion to it to fry a little bit for about 1 to 2 minutes maximum please for safety purposes. The reason for frying the onion is to give it a nice aroma and improve the taste as well if your vegetable oil has a smell you don’t like, the frying onion in it, will remove the unwanted smell.

Then add all your tomatoes, that is, the crushed, diced and tomato paste, the combination of these tomatoes gives a very nice finishing, your stew will have an awesome taste, add your ½ cup of pepper (note: for the pepper, use at your discretion, use quantity of pepper you can tolerate).

Set your deep fryer up and make it ready to fry the chicken. Now go back to check how the meat is doing, if cooked, set into the fryer, and fry it to crispy.

By now, the tomato combination should be cooked, so add your cooked beef comb, the fish and the meat stock as well, let it cook for about 5 minutes for all to blend together.

After 5 minutes, add your fried chicken, set your to the barest minimum because at this point, so you can leave for about 5 minutes and then turn the stove off.

 

NEXT IS COOKING THE RICE

For 4 cups of rice, set on the stove or rice cook 6 to 7 cups of water to boil. Wash your rice and set aside while waiting for the water to boil. Once boiled, add your rice carefully add a ¼ teaspoon of salt (optional) and leave to cook for about 15 minutes.
